To win some time: start the Parfait with a ready made base from fex. Debic, a well-known for its quality cream.
Ingredients for 2,5 liters Parfait iced cream with Brazilian acai berries:
- 2 ataste acai smoothie packs
- 3 bananas (2 for preparation, 1 for the finishing touch)
- 8cl Pisang Ambon
- 1 liter Debic Parfait
- mint leaves
Preparation:
1. Let the 2 ataste acai smoothie packs defrost at room temperature.
2. Blend acai with 2 bananas and 8cl Pisang Ambon.
3. Mix 1 litre of Parfait base with use of kitchen robot at maximum strength (stay around to check on substance, about 1,5 - 2 minutes)
4. Add to the Parfait the contents of the blender and blend briefly till homogeneous
5. Use kitchen bag to portion at will in (small) bowls
6. Remove from the freezer about 15 minutes prior to serving (depending on the size of the portion). Finish with a slice of banana and a leave of mint. The ice won't melt when it's defrosted!
Perfect with a pousse-cafe, dessert plate or buffet

Try using different types of liquor (but be careful to keep the substance 'dry'), and mix with pistachio nuts for some crunch,...
